Pomegranate Salad

I have never met a pomegranate I didn’t love, then eat.   It’s the fruit that I wait for from year to year.  I even wonder why it’s not available other times during the year like all the other fruits.  For me,  it feels like home.  There was a pomegranate tree just outside my bedroom window in my parents’ house in Lebanon.  I could literally stretch my arm and touch it.  I remember checking the little fruits, waiting desperately for them to grow and ripen.  
It’s so much fun to eat.  Messy foods are always fun to eat. When I lived in L.A. a few years back, I could buy the arils by the pound, all picked and ready to eat… so much easier, especially when you need a lot of it.
I find any excuse to use it like with eggplant and squash dishes, and I have so much of it, I turn it into this snack.  It doesn’t take much time at all, one fruit will yield enough to share.  I’m not sure if it classifies as a salad but for lack of a better word, we’ll go with that.  It’s absolutely refreshing and re-energizing.  This was our Fall snack of choice as kids, and still a favorite 100 years later (or so it feels).

1 large pomegranate, cleaned and picked
1 apple, cut into bite size pieces (bananas are really great too)
2-3 tbsp pine nuts, raw
1 cup water  
1 tbsp coconut crystals (substitute with sugar, honey, agave or any sweetener you like)
1 tsp orange blossom water


Dilute the sweetener with the water and the orange blossom water.  Place the cut and cleaned fruits in a bowl, pour the sweetened water over, add the pine nuts and enjoy with a soup spoon (maybe I should have called it a Soup).

  1. I remember eating this as a kid too. It was my FAVORITE!! My dad would walk in with a bag and we would each get one to peel, wash, put in the bowl, and DEVOUR :). Now they have a big beautiful pomegranate tree in their backyard :). It blos…soms in the around the time we get there and isn't quite ready when we leave, it's such a tease!

    Hatem has been eating this almost every night for the past week (minus the pine nuts;)).
